Swiss Omelet Roll

1 cup mayonnaise
2 tablespoons mustard
2 tablespoons green onion, sliced
1/2 cup mayonnaise
2 tablespoons flour
1 cup flour
1 1/2 cup ham, finely chopped
1 cup Swiss cheese, shredded
12 eggs, separated
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup green onion, chopped

Directions: Combine 1 cup mayonnaise, mustard and 2 tablespoons green onion; mix well. Combine 1/2 cup mayonnaise and flour. Gradually add milk and beaten egg yolks, cook stirring constantly over low heat until thick. remove from heat; cool 15 minutes. Fold mayonnaise mixture and seasonings into stiffly beaten egg whites. Pour into a jelly roll plan lined with wax paper, brushed with mayonnaise. Bake at 425°F for 20 minutes. Invert pan on towel, carefully remove waxed paper. Cover with combined ham, cheese and green onion. Roll from narrow end, lifting with towel while rolling. Serve with seam side down. Top with mustard sauce. Makes 6 to 8 servings.
