Quick and Colorful Rainbow Fajitas

1 red bell pepper (cut into strips lengthwise)
1 yellow bell pepper (cut into strips lengthwise)
1 green bell pepper (cut into strips lengthwise)
2 tablespoons olive oil
1/8 teaspoon garlic salt
1 cup shredded Mozzarella cheese
4 fajita size flour tortillas
1/2 cup white raisins (optional)

Directions: In microwave dish place peppers, olive oil and garlic salt. Mix lightly to coat. Microwave on high until tender but still firm, about 2 minutes or more depending on your microwave. Divide evenly and place in center of tortilla using equal amounts of colors. Sprinkle with 1/4 cup cheese for each fajita. Divide raisins into 4 equal parts and place on cheese. Fold in short ends and roll into burrito shape. Place on plate and heat in microwave 1 minute more until cheese is melted.

Notes: This makes a quick lunch. The white raisins add contrast.
