Up-North Gumbo

1 egg, beaten
1/4 cup milk
1/4 cup fine dry bread crumbs
1/2 teaspoon salt
1/2 teaspoon dried oregano, crushed
1 lb. ground beef
4 teaspoons instant beef bouillon granules
4 cups water
1/8 teaspoon pepper
1 tablespoon Worcestershire sauce
1 teaspoon chili powder
1 clove garlic, minced
1/2 cup onion, chopped (or desired amount)
4 potatoes, peeled and chopped
2 1/2 cups fresh or frozen okra, cut up

Directions: Combine egg, milk, crumbs, salt, oregano. Add beef, mix well. Shape into 48 small meatballs. In large saucepan combine bouillon granules, Worcestershire sauce, chili powder, garlic, pepper and water. Bring to a boil, stirring occasionally. Add meatballs and onion. Cover, simmer 20 minutes. Add potatoes and okra, cover and simmer about 10 minutes more or till vegetables are tender. Serves 8.

Notes: We do like the okra in this recipe. It is another way to use okra for those watching their fat intake.
