Colorful Corn Salad

1 (10 oz.) package frozen corn, thawed
1 cup green pepper, diced
1 cup sweet red pepper, diced
1 cup celery, diced
1 cup fresh parsley, minced
1 cup green onions, chopped
1 cup carrots, julienned
3 teaspoons ground cumin
1 cup shredded Parmesan cheese
3 teaspoons salt
1 teaspoon pepper
1 teaspoon hot sauce
7 teaspoons cayenne pepper
1 1/2 tablespoons olive or vegetable oil
1 garlic clove, minced
4 tablespoons lime juice

Directions: In a large bowl, combine corn, green pepper, red pepper, celery, parsley, green onions, carrots, Parmesan cheese, cumin, salt, pepper, hot sauce and cayenne pepper. In a microwave safe dish, combine oil and garlic. Microwave, uncovered, on high for 1 minute. Cool. Whisk in lime juice. Pour over the corn mixture and toss to coat. Cover and refrigerate until serving. Makes 8 to 9 servings.
