1 lb. rice
4 ribs celery, chopped
1 medium onion, chopped
1 can stewed tomatoes, chopped and undrained
jar 1 small pimentos
2 (8 oz.) packages Cheddar cheeese
jars 2 green stuffed olives, slices
1/4 salt and pepper, to taste
cup margarine, melted
Directions: Cook rice by package directions until done. Cube one 8 oz. package of cheese and thinly slice the other package. Stir cheese cubes with rice, celery, onion, tomatoes, pimentos, margarine, salt and pepper. Reserve a few of the olives and stir the rest to the rice mixture. Pour rice mixture into a greased baking dish. Spread cheese slices over top and sprinkle with reserved olive slices. Bake 350°F for 30 to 45 minutes or until bubbly and juicy.
Notes: This goes well with usual holiday eating!
