Celery Dressing

2 cups finely chopped celery
1 cup chopped onion
2/3 cup melted margarine
7 cups dry bread crumbs
2 teaspoons salt
1/2 teaspoon pepper
1 1/2 teaspoons sage
1/2 teaspoon poultry seasoning
1 1/4 cups milk
1 1/4 cups broth (chicken or turkey)
2 slightly beaten eggs

Directions: Saute celery and onion in margarine until soft. Combine bread cubes and seasonings. Add the rest of ingredients; toss lightly to blend. Pour into baking dish or stuff loosely into cavities of bird. Makes 6 1/2 cups of stuffingenough for a 12 pound turkey.

Notes: Homemade bread works best. To dry bread: slice, layer on cookie sheet and put in low oven until slices are dry. Then cube.
