2 (14 1/2 oz.) cans drained hominy (1 white, 1 yellow)
1 (4 oz.) can drained and chopped green chiles
1 (2 oz.) jar drained and diced pimentos
1 (8 oz.) container sour cream
salt and pepper (to taste)
2 cups grated mild Cheddar cheese, (reserving 1 1/4 cups for topping)
2 tablespoons grated onion
Directions: Fork toss all ingredients, except reserved cheese. Pour into 1 1/2 quart casserole dish, top with reserved cheese. Bake at 325°F until cheese melts and casserole is lightly browned and bubbly around edge of dish.
Notes: This is a delicious and colorful way to dress up hominy and is a winner of compliments for those who thought they would never care for hominy.
