Burnt Sugar Pie

3/4 cup burnt sugar syrup
1-1/2 cups water, hot
6 eggs
1-1/2 cups white sugar
3 tablespoons (heaping) corn starch
1/4 cup margarine
1 teaspoon vanilla
1 teaspoon butter flavoring
4 cups milk
pinch salt
6 egg whites
1 teaspoon vanilla
1/2 teaspoon cream of tarter
2/3 cups sugar

Directions: 2 pie crusts, baked and ready. Use heavy sauce pan on stove and add 3/4 cup white sugar to burn on the stove until golden brown, also have a little heated water on hand to heat sugar, when it is brown enough, pour this in the sugar with a lid so as not to spew out on you. About a cup or more heated. Turn burner down low, and let it get like syrup. Add to burnt sugar syrup. Mix all these ingredients in a big mixing bowl. First beat until foamy egg yolks, save whites for the top. Then add this to your egg yolks, white sugar, corn starch, margarine, vanilla, butter flavoring, if you use regular margarine skip the butter flavoring, add whole milk or 2% if you don't want it to rich, and a pinch of salt. Pour this mixture in the pan on the stove with the burnt sugar, turn your burner up and cook, stirring constantly until thick. If you think it needs more milk add, same with cornstarch. For topping, take the egg whites that were set aside, add 1 teaspoon vanilla and teaspoon cream of tartar, add gradually while whipping sugar. Whip until soft peaks stay firm, add to the top of the pies and brown. This will make two pies.
