Apricot-Oatmeal Cookies

2 sticks margarine, melted
2 large eggs
2 cups brown sugar
1/2 teaspoon almond extract
2 cups flour
2-1/2 cups oatmeal
1/2 teaspoon baking powder
1/2 teaspoon soda
pinch of salt
1/2 cup almonds, ground
1/2 lb. dried apricots, diced

Directions: Cream margarine, eggs, sugar and extract. Add flour, oatmeal, baking soda and powder, salt. Mix thoroughly. Add apricots and almonds. Mix. Drop onto cookie sheets and bake at 350°F for 10 to 12 minutes. Store in tightly sealed container. Makes 4 dozen cookies.

Notes: This recipe can be made with dried apples and walnuts instead of dried apricots and almonds. If you do so, replace the almond extract with 1 tsp vanilla extract. If you prefer not to use nuts, replace them with an additional 1/2 cup of oatmeal.
