Banana Nut Bread

1/2 cup liquid shortening
1 cup sugar
2 eggs
2 (large) very ripe bananas
1 teaspoon lemon juice
2 cups sifted flour
1 teaspoon soda
1/2 teaspoon salt
1/2 cup walnut pieces

Directions: Preheat oven to 350°F. Grease two 8 1/2 x 4 1/2 x 2 5/8 inch loaf pans or a 9 5/8 x 5 1/2 inch loaf pan. In food processor or large mixer bowl, beat shortening, sugar, eggs, bananas, and lemon juice. Add flour, soda, and salt sifted together. Mix well, then add nut pieces. Pour into pan or pans. Bake 1 hour or longer until golden brown and firm in the middle. Cool 10 minutes and then remove from pans.

Notes: The bread stores very well in foil or plastic bag. Freezes well.
