Cream Cheese Roll-Ups
Chef:  Danielle Crouch - Estancia, NM          Category:  Appetizers

4 (large) whole flour tortillas
1 (8 oz.) package cream cheese
12 to 15 thinly sliced turkey, ham, roast beef (meat of your choice)
taco seasoning or season salt (flavoring of your choice)
6 to 8 slices American cheese (sandwich slices)

Directions: Bring cream cheese to room temperature, spread evenly and generously over tortilla, leaving fingernail length space from all edge's except one small part. Dash seasoning of your choice lightly over cream cheese then arrange thinly sliced meat, overlapping in the center to leave edge on the outside of tortilla. Top meat with sandwich cheese only across the center going left to right on the tortilla keeping edge with cream cheese at the 12 o'clock position. Warm tortilla in microwave just long enough to make tortilla soft. Place egde of tortilla covered with cream cheese away from you and begin to roll tight enough that tortilla doesn't crack. Keep in mind that the cream cheese will spread when you begin to roll. Rolled up tortilla should be about the size of a half dollar. Use the cream cheese edge to seal up wrap. Place seal side down onto a plate and continue making the other rolls. Cover with plastic wrap and chill for 1 to 2 hours, until firm. Remove from cold and slice ends off of the rolls, then slice into 1/4 inch slices. Arrange onto a serving platter alternating meat varieties for a nice presentation. Cover with plastic and keep cool until time to serve.

Notes: You can use a variety of meats, sliced cheeses and spices to suit you and your guest's tastes.
