Hawaiian Pie

1 (20 oz.) can pineapple, crushed
1 cup cold water
1 cup coconut
1/2 cup sugar
1/8 teaspoon salt
3 tablespoons cornstarch
2 eggs
3/4 teaspoon coconut flavor (optional)

Directions: In a three quart sauce pan mix pineapple, water, coconut, sugar, salt and cornstarch. Then carefully separate the eggs. Add the yolk's to the ingredients in the sauce-pan. Beat the egg whites until stiff or peaks form, set aside. Cook the mixture in the sauce-pan until thick, stirring constantly. Fold the egg whites into the hot mixture. Then add the coconut flavoring and mix well. Pour into a prepared pie crust and sprinkle with extra coconut. This will fill a 9 inch pie pan, nicely rounded.
