Apricot Salad

1 package apricot gelatin
1 cup hot apricot nectar
1 cup small marshmallows
1 cup canned apricots, diced
1 cup apricot juice/nectar (off apricots)
1 egg, slightly beaten
2 teaspoons flour
1/4 cup sugar
1/2 cup apricot nectar
2 tablespoons butter/margarine
1/2 cup sour cream
1 cup cheddar cheese
1/8 teaspoon salt (optional)

Directions: Dissolve gelatin in 1 cup hot apricot nectar. Add 1 cup apricot juice/nectar. Chill until partially set, then add diced apricots and marshmallows. Chill in refrigerator while making topping. For topping cook egg, slightly beatened, add flour, sugar, and apricot nectar until thickened. Remove from heat and add butter. Let cool. Fold sour cream into this mixture. Fold cooked mixture into gelatin mixture. Top with grated cheese and chill 1-2 hours or until set firmly.

Notes: Enjoy. This recipe has been passed down from my grandmother to my mother and now to me. I remember at family gatherings, this was always my Dad's favorite salad.
