Triple Mushroom Tart

1 unbaked pie crust
1 cup fresh brown mushrooms
1 cup fresh oyster mushrooms
1 cup fresh shiitake mushrooms
1/4 teaspoon marjoram
2 tablespoons butter
3/4 cup shredded Gruyere cheese
3/4 cup shredded Swiss cheese
1/2 cup Canadian Bacon (or ham)
2 slightly beaten eggs
1/2 cup milk
1 tablespoon chives

Directions: Place piecrust in 9" pie pan and line with 2 layers of foil and bake at 450 degree oven for 8 minutes. Remove foil, bake 4-5 mins. til set and dry. Reduce heat to 375 degrees. Cook mushrooms, marjoram and butter in skillet at med-high heat til tender and liquid is evaporated. Remove from heat. Combine cheese and ham in a large bowl. Add mushroom mixture, eggs, milk and chives. Stir. Pour into pastry shell. Bake at 375 degrees for 40 mintues or til set & golden. Cool on wire rack 10-15 minutes. Cut into wedges.,Use any combination of mushrooms-whatever is available. They all work. If you can't find Gruyere cheese, substitute another strong cheese such as blue cheese or gorgonzola.
