1 tablespoon butter
2 cloves garlic, chopped
2/3 cup fresh mushrooms, sliced
1 cup fresh frozen peas
2 cups smoked salmon, chopped
1 egg (for each person serving)
Directions: Saute onion and garlic in butter until done. Add mushrooms, peas, salmon and beaten eggs. Cook and stir until eggs are done. Serve garnished with parsley.
Notes: Add a salad and you have a complete meal.
