2 lbs. ground beef
1 (10 oz.) can enchilada sauce, mild
2 (1.25 oz.) packages taco seasoning
1/2 cup water
1 (10 count) package medium size flour tortillas
1 (2 lb.) package Colby and Monterey Jack cheese mix, finely shredded
Directions: Brown ground beef and drain. Add taco seasoning and water. Mix well and let simmer 5 minutes. Take one tortilla and sprinkle a tiny bit of the cheese toward one side then place 1 to 2 spoonfuls of meat mixture on top of cheese and roll up. Repeat with remaining tortillas. Place all in a 9x13 inch pan lightly greased with a non-stick cooking spray. Pour the can of enchilada sauce over all, coating evenly. Top with remaining cheese. Bake at 350°F until heated and cheese is melted and bubbly.
Notes: Top with picante sauce and sour cream if desired.
