Rice and Spinach Casserole

1/2 cup brown rice, uncooked
3 eggs
4 ounces Cheddar cheese, shredded
2 tablespoons fresh parsley (or 1 tablespoon dried)
1/2 teaspoon salt
1 (6 cups) pound fresh spinach, torn
3 tablespoons wheat germ
3 tablespoons Parmesan cheese, grated
1 tablespoon oil

Directions: Heat oven to 350°F. Grease a 1 1/2 quart casserole dish. Cook brown rice as directed on package. In large bowl, beat eggs; add cooked rice, Cheddar cheese, parsley and salt. Fold in spinach. Pour into prepared casserole dish. In small bowl, combine wheat germ, Parmesan cheese and oil. Sprinkle this mixture over the top of the casserole. Bake for 30 minutes or until spinach is tender. Makes 9 1/2 cup servings.

Notes: This is a delicious way to serve a vegetable that is so good for us! The wheat germ also adds an extra boost of nutrition!
