Broccoli and Cauliflower Gratin

2 (16 oz.) packages fresh broccoli and
cauliflower flowerets
1 1/2 cups reduced fat mayonnaise
1 (4 oz.) cup shredded, reduced fat Cheddar cheese
1 (3 oz.) package shredded Parmesan cheese
4 green onions, sliced
2 tablespoons Dijon mustard
1/4 teaspoon ground red pepper
3 tablespoons Italian seasoned bread crumbs

Directions: Arrange the flowerets in a steamer basket over boiling water. Cover and steam for 6 to 8 minutes or until crisp-tender. Drain well. Arrange the flowerets in a lightly greased 2 quart baking dish. Stir together mayonnaise and next 5 ingredients. Spoon over flowerets. Sprinkle with breadcrumbs. Bake at 350°F for 20 to 25 minutes or until golden. Yields 8 servings.

Notes: This is another delicious way to incorporate vegetables into our menus! It is also very simple and yet, so very good!
