Cheddar Crisps

1 3/4 cups all purpose flour
1/2 cup yellow cornmeal
1/2 teaspoon baking soda
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup butter
6 oz. extra sharp Cheddar cheese, shredded
2 tablespoons white vinegar
1/2 cup cold water

Directions: Mix flour, cornmeal, baking soda, sugar, and salt and cut in the butter until the mixture resembles coarse crumbs. Add the cheese, vinegar, and water. Stir until mixture forms a soft ball, wrap in plastic and chill 1 hour or until dough is firm enough to handle. Preheat oven to 375°F. Roll 1/4 of the dough into a paper thin round, cut into 8 wedges. Bake 10 minutes or until crisp. Repeat with the remaining dough. Store in a tightly covered container.
