Skillet Enchiladas

2 pounds ground beef
1 onion, chopped
1 (15 oz.) can kidney beans
1 can Ro-Tel diced tomatoes and green chiles
1 (small) can tomato sauce
1 can cream of mushroom soup
1 can enchilada sauce
1 can chiles, chopped
2 cups Cheddar cheese
1 dozen tortillas

Directions: Preheat oven to 350. Brown beef with onion, drain. Add other ingredients except for cheese and tortillas. Simmer for 15 minutes. Layer ingredients in oblong pan. Layer meat sauce, tortillas, cheese, tortillas, meat sauce and cheese. Bake 30 minutes or until tortillas are soft and cheese is melted.

Notes: Recipe calls for corn tortillas. (I prefer to use flour tortillas-when baked they seem more like dumplings.) My guys also prefer the flour tortillas. This is a quick and easy meal to fix on a busy day. May also be prepared a day before.
