Carrot Cheesecake

1 cup flour
1 cup oatmeal, uncooked
1/4 cup vegetable oil
1/2 teaspoon vanilla
1/2 cup apple juice
1 1/2 cups cottage cheese
1 1/2 cups carrots, cooked and mashed
3 eggs
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon cloves
1/4 cup flour

Directions: Pastry: Combine flour, oatmeal, oil and vanilla. Add apple juice, mix. Press this dough in greased 9 inch pie plate. Filling: Combine cottage cheese, carrots, eggs, cinnamon, nutmeg, cloves and flour in blender. Blend well. Pour into pie plate. Bake at 350°F for approximately 50 minutes. Refrigerate after cooling. Makes 8 servings.

Notes: Serve with whipped cream or vanilla ice cream.
