Super Fajitas

1/2 cup vegetable oil
2 tablespoons red wine vinegar
1/2 cup lime juice
1/3 cup onion, finely chopped
1 teaspoon sugar
1/2 teaspoon thyme, dried
1/2 teaspoon oregano, dried
1/2 teaspoon pepper
1/4 teaspoon cumin, ground
3 buds garlic, minced
2 pounds round steak
flour tortillas, large

Directions: Combine oil, wine vinegar, lime juice, onion, sugar, thyme, oregano, pepper, cumin,and garlic in a large shallow glass container or sealable plastic bag, mix well. Trim fat, remove bone if necessary. Pound steak to 1/4 inch thickness. Add steak to marinade, turning to coat each side thoroughly. Cover and refrigerate 8 hours or overnight. Remove steak from marinade, drain well and grill over medium coals or broil in oven broiler 4 to 6 minutes on each side or until desired degree of doneness. Slice diagonally into thin slices. Heat tortillas according to package directions. Wrap around meat and your choice of toppings, picante sauce, guacamole, chopped tomatoes, finely chopped onions and sour cream.

Notes: I like to saute my onions.
