Homemade Ice Cream

2 1/2 cups sugar
4 eggs
1 pint thin cream
2 quarts milk
1 1/2 tablespoons vanilla
4 Junket tablets

Directions: Beat eggs, put in sugar and stir. Add about 1 pint milk. Stir until boiling point. Add rest of milk, cream and vanilla. Put in freezer container, either electric or hand crank. Dissolve Junket tablets in cold water enough to melt them and stir into ice cream mixture. Let stand in freezer until crust forms on top of mixture. Use 15 pounds ice and 3 pounds rock salt mixed together to pack around the container.

Notes: This ice cream recipe was given to me from a neighbor lady when she heard my son wanted ice cream for his birthday in February. He and his dad went out and chipped ice off the water trough. This has been a family favorite.
