Hot Fudge Cherry Pudding

1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup sugar
4 tablespoons cocoa, divided
1/2 cup milk
1 (8 oz.) jar maraschino cherries, save juice
2 tablespoons oil
1/2 cup nuts, chopped
1 cup brown sugar
1 1/4 cups hot water, plus cherry juice
whipped topping or ice cream (optional)

Directions: Mix flour, baking powder, salt, sugar and 2 tablespoons cocoa. Stir in milk and oil; blend in nuts. Spread in 8x12 inch pan or baking dish that is oiled. Spread maraschino cherries over chocolate mixture. In a small bowl, combine brown sugar and remaining cocoa; sprinkle over batter. Pour hot water mixture over all. Bake at 350°F for 35 to 40 minutes. Top with whipped cream or ice cream. Makes 10 servings.

Notes: A family favorite dessert; I added the cherries to the original recipe.
