Holiday Specialty Bread

3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs, beaten
3 cups sugar
1 cup vegetable oil
2 cups carrots, grated
1 (9oz.) can crushed pineapple, drained
2 teaspoons vanilla
1 cup nuts, chopped
1/2 cup flaked coconut, optional

Directions: Sift flour, salt, baking soda and cinnamon together. Combine eggs and sugar in mixer bowl, beat at medium speed until mixed. Beat in oil, a small amount at a time. Stir in flour mixture, carrots, pineapple, vanilla and nuts. Place batter in 2 greased loaf pans. Bake in 350°F oven for 1 hour.

Notes: Delicious any time, but especially good for brunches at Christmas time.
