Autumn Surprise Cake

2 cups apples, unpeeled
1 cup sugar
1 1/2 cups flour
1 teaspoon baking soda
1/2 cup nuts
1/2 cup coconut
1/2 teaspoon salt
1/2 cup cooking oil
1 egg, beaten
1 teaspoon vanilla
1/2 cup brown sugar
1/2 stick margarine
powdered sugar
1 teaspoon vanilla

Directions: Mix chopped apples and sugar together let stand until juice forms, add flour, soda, nuts, coconut, salt, oil, egg and vanilla. Pour into a 8x8 inch pan that has been greased and floured. Bake at 350°F for 40 to 45 minutes. Icing: Mix brown sugar, margarine and vanilla. Melt in microwave. Add powdered sugar to a spreading consistency.

Notes: This is a wonderful fall/winter dessert. It becomes more moist after the first day.
