Fruit Pizza

1/2 cup margarine
3/4 cup sugar
1 egg
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cup flour
1 (8 oz.) package cream cheese, softened
1/2 cup sugar
2 teaspoons pinapple juice
1 can pineapple, crushed
4 teaspoons cornstarch

Directions: Crust: Cream margarine and sugar; add egg. Stir in dry ingredients and mix well, pat with floured fingers into a 14 inch pizza pan. Bake at 350°F for 8 to 10 minutes, or until light brown. Sauce: Mix together cream cheese, 1/2 cup sugar and pineapple juice, spread on cooled crust. Arrange any fruits of your choice over the top of the sauce. Use one can of crushed pineapple in heavy syrup, drain the pineapple well using a strainer over the top of a measure cup or bowl to retain liquid of approximately 1 to 1 1/2 cups. You may use bananas, kiwi, strawberries, mandarin oranges etc. Mix the juice drained from pineapple, with 4 teaspoons cornstarch. Cook until thick in microwave or on stove top. Cool and spread over fruit. Chill and serve.
