Aaron's Spinach Pastry Snacks

2 tablespoons butter or margarine
1/2 cup onions, chopped
1 (10 oz.) package frozen spinach, thawed, drained and chopped
1 cup mushrooms, chopped
1 can cream of chicken soup
3 eggs
1 cup Muenster cheese, grated
1/4 teaspoon nutmeg, ground
1 package puff pastry pockets
1 tablespoon cornmeal

Directions: In 2-quart saucepan over medium heat, in hot butter, cook onion until tender. Add spinach and mushrooms; cook until mixture is dry. In medium bowl, combine soup, 2 eggs, cheese and nutmeg; add spinach mixture. On floured surface, roll out 2 sheets of pastry pockets (pinch perforations together to seal well) into 15x10 inch rectangle. Sprinkle cornmeal in bottom of 15x10 inch jelly roll pan. Line pan with rolled pastry pockets. Spread spinach mixture on pastry. Roll out remaining 2 sheets of pastry; place on the spinach mixture. Tuck in edges. Beat remaining egg, brush on top crust. Bake 45 minutes at 350°F or until golden brown. Cool 25 minutes; and cut into the shape you prefer.
